I have made my list now I just have to bite the bullet and buy it. I might just stop in Houston and pick them up in person. This is just the latest list. Kat stopped by Penzy’s and bought me a slew of things not on this list. I love Penzeys!

You know… a little research, even on the Penzy’s site could save you TONS of dough!
For instance: Mignonette Pepper: (QUOTE)

Now, why the heck wouldn’t you buy whole white peppercorns, whole black peppercorns, and coriander, invest in a $10 coffee grinder and make your own? Besides being infinitely fresher, you’d have the components for other things!
And NEVER buy “curry powder”! Google it! There are thousands of recipes, and again, the fun is in throwing the stuff in the ol’ grinder, making a small batch to your liking and having all the components for other stuff!
“Mixes”, “Blends”, “Steak Seasoning”, etc., are all dumb. Commonly made of poorer quality spices, tons of salt, and marginal herbs, they eat up your budget and limit your flexibility.
...And there is nothing like tossing a quarter-teaspoon of turmeric (that you bought to make YOUR curry powder), into a pot of rice, just to make it a prettier color knowing that you will make that salmon, rice and broccoli a fargin’ Gourmet magazine photo dinner!

I see your point, though I will defend penzey’s here. Their blends are almost all salt free blends. Which is part of why I love them. I prefer to salt my own food and not guess at how much is in what etc.
The idea of buying all the different spices is a great idea and one I will probably end up doing. For now, my time alone to play in my new kitchen is at a premium. I have this delish little fantasy where I can buy all the dean and deluca tins and fill them with delectable spices. I will get there. For now, this stuff is so much better than what I get at the HEB so it will have to do for now. But the suggestions are all good.
I’m sooo jealous you have a Penzey’s you can actually go to. Strictly online for me here. And the only complaint I have with them is that their Indian curries are wimpy. Jerk too. You need to add equal amounts of ground sanaam pepper to get them anywhere near as hot as they ought to be, and about 3 times as much curry as they say to use to get them rich enough. You want real jerk, either make your own or find a little expensive bottle of Busha Browne’s. Mmmm, fire sauce.
