Thanksgiving Prep Because I Am OCD about Lists…
Anytime I have something coming up that involved other people I get a bit insane. Holiday dinners are the worst even though I enjoy the time the most. I have decided to abandon my normal rice laden Cajun holiday extravaganza in deference to my white boy husband. Now, I am not doing damn mashed potatoes, but I am NOT doing dirty rice, oyster dressing, or shrimp jambalaya as I usually do. The Menu is starch laden though, I will only make so many compromises to Caucasianess. I will star the things I consider whitey food and you will see I am making a HUGE effort here.
Menu:
Appetizer Snacky Stuffs:
Cheese tray & Crackers and my Cheese Ball Extraordinaire.
- Turkey Breasts cuz I loves me a bakin’ bag and I hate making turkey unless it is fried
Pernil (pork roasted courtesy of Rocio)
Boneless Beef Ribs (courtesy of Lee)
Giblet Gravy
- Cornbread & Sausage Stuffing with apples in it.
- Mac & Cheese which is insanely fattening and ooooh so good.
- Peas (ugh, but I can make them work. Bacon and onions are my friend)
Arroz con gandules (again rocio)
Cucumbers & Onions in vinegar (because I loved my Maw-maw and no holiday meal is complete without them)
Dessert: Pumpkin Pie and Pecan Pie
Now, I might do a corn casserole cuz I got a good recipe but I am limited with oven space, I only have one. I will of course have a beef roast in the slow cooker for the sole purpose of giving a good beef gravy for my kids who would wig if I didn’t make rice and gravy.
As you can see it is ripping across the ethnic index, but still there is a decent representation of white people food! Yay me!.
I am pleased.

I love cucumber salads…..
Would you post that cucumbers and onion recipe here ?

My grandmother’s cucs are easy peasy…
Slice cucumber thin. Slice onions thing. drench in vinegar. Pepper the heck out of it. Chill for an hour.
I do it with seasoned rice wine vinegar because i am addicted to it. I could literally drink it from the bottle. But good ole cider or white vinegar is good too, just more tart.
My friend Kat does a cucumber salad I love too.
Paper thin cucs, squeeze between between paper towel to get the liquid out. Add sour cream. A table little sugar, and salt and pepper & chill it. I could eat a bucket of that stuff too. It is really good with heavy food because it is light and cool.
I also like:
Cucumber cut into small chunks
Avocado cubed
Tomato seeded and diced
Celery diced (i skip this cuz i hate celery)
Cover with seasoned rice wine vinegar and chill.
Pepper to taste.
That is a favorite summer lunch. Good stuff. If you haven’t tried seasoned rice wine vinegar, do it. It is not as tart. it is sweeter and milder. Like I said, i could drink it.

I’m a big fan of balsamic vinegar, myself.
I use only “FINI/Modena” from Italy…..
I go to one of the Wms.-Sonoma stores in Houston about 3 times a year.
My cucumber salad recipe is a variation of my MIL’s.
thin sliced cucumbers…(English cucumbers are often not as bitter as regulars can be, IMO)
cherry tomatoes – halved
thin sliced onion – any color, I use yellow
thin sliced any color bell pepper (optional)
fresh ground pepper
salt
kraft, or other non-sweet mayonaise
apple cider vinegar
sugar or sweetener – dissolve in the vinegar
Sorry don’t have amounts written down…..it’s one of those guessing things based on others you’ve made.
Stir together…....best if refrigerated overnight.

Do you prefer any particular brand of seasoned rice wine vinegar ?
The brand of Balsamic that I buy has a sweetness to it, also.

i cannot remember the brand. bright red lid and a asianish looking label. it is cheap and quite good.

I think we grew up with the same Maw-Maw… Cucumbers and onions with vinegar and pepper at almost every meal.
Hey, what’s the corn casserole recipe? I’m looking for something else, as well. If you post it or e-mail it I’d really appreciate it!
